Creamy Carrot Salad

Serves: 4 servings


This recipe should be made about an hour in advance. When served, you can add any fresh ingredients, like shredded iceberg lettuce or savoy cabbage, grapes, or apples cut into matchsticks. If these fresh ingredients are added, keep in mind that the salad will not keep as long.

Ingredients

  • 2 1/2 cups grated carrot
  • 1/2 cup raisins
  • 2 rounded tbsp mayonnaise
  • 2 tbsp whipping cream
  • Dash of salt, pepper, onion powder and garlic powder
  • Pinch of nutmeg (optional)
  • 1/2 cup chopped walnuts or pecans

Steps

  1. Mix mayonnaise, cream, salt, pepper, onion and garlic powders, and nutmeg
  2. Pour dressing over grated carrots and raisins, mix thoroughly
  3. Cover and let sit in the fridge for 1-2 hours until raisins plump
  4. Serve topped with chopped walnuts or pecans
