Rhubarb Returns

Rhubarb returns once again this week, and once again we managed to avoid the temptation to go with strawberry-rhubarb pie (it's too obvious a choice, and we want to find more ways to use these ingredients while we have them!). The first recipe uses rhubarb in a way I never even thought it could be used: Raw. If you are like me, warning bells are going off in your head, but I've checked, it is safe raw (avoiding the leaves, of course). The sugared rhubarb in this salad fills the role of celery (watery and some crunchy texture) with a nice little tart addition.

The rhubarb adds a nice fresh flavour, and pairs really well with the apple. Along those lines, we came up with a sauce of rhubarb and golden sauteed onion to use like applesauce on pork chops.

Strawberry Rhubarb

Last week, we got in on the first batches of Ontario asparagus we could lay our hands on. This week, we planned for rhubarb, and got strawberries in at the last minute! The day-neutral strawberries that are available now flower constantly, and aren't affected by the changes in day length like "regular" strawberries. This means they can come out earlier, and get to your plate faster. Rather than going with the standby pie, we did something a different to showcase each ingredient.

These little muffins have a moist texture and a delicious sweet and tart flavour, thanks to the streusel almond topping and the rhubarb. Make a batch, and serve them with coffee one morning, or if you're feeling a little more like sitting on the patio enjoying this warm weather...

The classic mojito uses mint and lime while this, as the name gave away, uses basil and strawberry. Give it a try and find a new use not only for strawberries, but basil too!
