Rhubarb Returns
By : Ontario Kitchen | On : 2012-05-27 | Category : Rhubarb Rhubarb returns once again this week, and once again we managed to avoid the temptation to go with strawberry-rhubarb pie (it's too obvious a choice, and we want to find more ways to use these ingredients while we have them!). The first recipe uses rhubarb in a way I never even thought it could be used: Raw. If you are like me, warning bells are going off in your head, but I've checked, it is safe raw (avoiding the leaves, of course). The sugared rhubarb in this salad fills the role of celery (watery and some crunchy texture) with a nice little tart addition. source: Ontario Kitchen The rhubarb adds a nice fresh flavour, and pairs really well with the apple. Along those lines, we came up with a sauce of rhubarb and golden sauteed onion to use like applesauce on pork chops. source: Ontario Kitchen
